Cinnamon Dolce Latte Recipe

Fall is here, which means that cinnamon everything is on the menu. When it comes to cinnamon-flavored fall beverages, few drinks are as big of a crowd favorite as the cinnamon dolce latte.

If this is the first time you have heard of this incredible concoction, cinnamon dolce lattes blend spicy cinnamon with vanilla, brown sugar, milk, and coffee to create a rich, creamy, and luxurious drinking experience that is perfect for fall.

If this sounds like something you would love to tantalize your taste buds with this autumn, here’s how to make the perfect latte at home using this amazing copycat cinnamon dolce recipe that uses homemade cinnamon syrup and your favorite blend of coffee.


For the cinnamon syrup:

  • 1 cup white sugar
  • ½ cup brown sugar
  • 1 ½ cups water
  • 1 tbsp vanilla extract
  • 3 cinnamon sticks

For the cinnamon dolce latte:

  • 4 tbsp cinnamon dolce syrup
  • 2 cups coffee brewed strong
  • 2 cups milk
  • Cinnamon for garnish (optional)
  • Whipped cream for garnish (optional)


For the cinnamon syrup:

  1. Incorporate the water, white and brown sugar, and cinnamon sticks in a small saucepan and bring it to a boil. Whisk occasionally.
  2. Let simmer for 10 minutes or until the volume reduces by half.
  3. Remove from heat. Stir in vanilla extract.
  4. Let the syrup cool completely.
  5. Place syrup in a mason jar and store in the refrigerator.

For the cinnamon dolce latte:

  1. Brew two cups of extra strong coffee.
  2. Add the milk to a saucepan and whisk over medium-high heat to froth (or use a frother).
  3. When the milk is half foam, remove from heat.
  4. Pour coffee into an Ember Mug² or Ember Cup.
  5. Stir 1-2 tablespoons of cinnamon syrup into the hot coffee and top with milk and foam.
  6. Garnish with whipped cream, cinnamon sprinkle, and/or drizzle of cinnamon syrup as desired.

How do I brew extra strong coffee?

Brewing extra strong coffee simply requires adjusting the coffee-to-water ratio. To make the brew stronger, just increase the amount of grounds used without adjusting the amount of water.

Most brews have a coffee-to-water ratio between 1:18 and 1:16 (1 part coffee and 18 to 16 parts water).

To find the right strength that you like best, you will need to play around, starting at a 1:18 ratio and slowly increasing the amount of coffee. However, if you use too much coffee (anything higher than 1:16 ratio), it will be under-extracted and sour.

If this happens, try switching to a different roast profile and start from the 1:18 ratio again. Play around until you find the roast and ratio that works best for you.

Can I make this non-dairy?

This drink is wonderful with all sorts of non-dairy milk alternatives.

However, do be aware that most plant-based milks do not foam very well. That said, your latte will still be delicious.
